From "Shindig", after Mal says Kaylee in a frilly dress would be like a sheep walking on it's hind legs, Zoe and Kaylee go off with (understandable!) attitude, Jayne asks "Is she mad or something?"
Typical Jayne, knows SOMETHING's going on, but has no clue as to what.
From "Serenity", when the Fed talked too quickly, "I was gonna get me a ear, too" I'm not sure he was joking.
Those two are my favorites for helping define the character.
And, of course, "I'll be in my bunk"... ROTFLMAO first time I heard it, still good for at least a chuckle everytime I watch the episode.

Well, most of my favs have been said already...Jayne gets the best lines...LOL
One that I really like though is in HoG when they are talking about going to help and Zoe says that any that want to stay on the ship can, Jayne's talking about not seeing the benefit of helping them out when Mal says "they're whores"....right away Jayne comes back with "I'm in", not so much a great line on it's own but the way it is delivered makes it classic Jayne, IMO.

My tag line is my favorite. It tells of the inner Jayne and how he has trouble expressing his feelings amonst his fellow crew members. Yes, there are more levels to Jayne than anyone realizes, and this one quote, this one statement, allows us insight to the depth of Jayne's humanity.

At the end of Safe she just reaches over all slow like and grabs his roll right off his plate. Jayne's like 'hey' and then he grabs for another one even though he probably could have gotten that one out of her hands...

While I was home on leave, she and I would snuggle on the couch in front of a roaring fire and watch two or three episodes because she wanted this amazing thing that is so much more than just a TV show to become a part of HER life as well. She caught the 'bread-grabbing' scene and replayed it for me to see. The way she described it was as follows:

In War stories when they bring Mal's ear back and Simon shows it to everyone, and Jayne says, "What are we gonna do, clone him?"
Oh, oh! And when in Shindig, whatever Jayne did in the part with badger was funny, all he did was eat and drink. Then he had some parts too like, " Hurt our feelings",and "what they'd do, see your face?" and when Badgers says,"whats the word". Jayne unexpectingly says, "Pretencious?".
Who could forget in Our Mrs. Reynolds..."I don't know this girl!" "Then,can I know her?"

I think everybody's hit all the good ones. But nobody's mentioned my tagline from "The Train Job". In the teaser when he, Mal, and Zoe are in the bar and Mal gets up to start the brawl. Jayne reacts to everyone's enthusiasm about the holiday as "What day is it?" As everyone carries on around him, Jayne remains in his own little world and further asks, "What month is it?" That's classic Jayne.

I really believe that Jayne is a prime example of the dominance of nurture over nature. Jayne acts all big, tough, and scary, because that is primarily all he has ever known. But sometimes he lets his inner, more caring, nature slip out.
My favorite example of this is not a quote, but a brief scene one might almost miss if they blinked.
In the episode where Kaylee gets shot (title?) we see Jayne huddles on the stairs outside the medic bay. He is looking in on her an it is clear that he is concerned, but he is tucked away where no one can see him.

My second favorite Jayne lines are actually the few lines he 'interjects' during Mal's conversation with Badger during "Shindig."
"Excuse me" (Taking Mal's potently alcoholic drink)

"What happened. . .he see your face?"
And my favorite, "Pretentious?"
Now. . .that look Mal gives Jayne. . .was that a "Jayne. . .please stop helping." look or was it a "Where the hell did you learn that word?" look?

Maybe it was just me, but I got the impression the money would never be good enough. Jayne was barely getting anything and then the guy said enough for his own ship. Yet still no.
So "That'll be an interesting day..." was posturing.
When he betrays Simon and River in his mind it's not touching Mal, and he waits till he does it without risking Mal.

I think it's pretty clear that in his mind he wasn't betraying Mal...one thing I also found interesting occured to me while I was re-watching "Safe" the other day. Jayne wanted Simon and River off Serenity so bad he was more then willing to just leave them there with no reward at all..so it's like the money he would have gotten in "Ariel" is just icing on the cake to him.

Note that while most of the out-takes with the F-word were removed from the DVD version of the Gag Reel, I believe that the main ones with Jayne's faux pas remain. Sitting in the main cargo bay he totally blows his line and only manages to spit out something like: "clerped... Mal... jipp.. blacc...", after which Mal stops and replies "CUT!... can't... get... line... out..." or some such thing as everyone laughs.

I've just watched "The Train Job" for the sixth time since getting the DVDs, and Jayne has a line there that no one else has mentioned so far.
It's in the infirmary scene after he was shot by the fed while being pulled up off the train. Wash is saying that Niska's men can just read a magazine, cause they aren't taking off until Zoë and Mal are back on the ship.
