"You know what the chain of command is? It's the chain I go and get and beat you with until you understand who's in ruttin' command around here!"
"They held a riot for me?"
"I'll be in my bunk...."
Then there is the "Dear Diary" entry, although I can't quote it verbatim... "Today I was pompus and my sister was crazy... something... womthing... It was the best day ever!"
"I'll be in my bunk..."

From "Shindig", after Mal says Kaylee in a frilly dress would be like a sheep walking on it's hind legs, Zoe and Kaylee go off with (understandable!) attitude, Jayne asks "Is she mad or something?"
Typical Jayne, knows SOMETHING's going on, but has no clue as to what.
From "Serenity", when the Fed talked too quickly, "I was gonna get me a ear, too" I'm not sure he was joking.
Those two are my favorites for helping define the character.
And, of course, "I'll be in my bunk"... ROTFLMAO first time I heard it, still good for at least a chuckle everytime I watch the episode.
MAL "You only gotta scare him."
JAYNE "Pain is scary..."

Not my favorite, but one that hasn't been mentioned yet:
That right there... exactly the kind of die-version I was talking about.
From Shindig
So much for siezing the moment...

"I'd make you prettier if I could!"
"So does this! I call her Veera."
The quote mentioned above: "Dear diary. Today I was pompus and my sister was crazy. Today we were captured by hillfolk and never seen again. It was the best day ever."
"Are you about to jump onto a moving train?"

Okay, Hero, I bet I got a few.
"I was aiming for his head"
"'Taint yours!...You might want to reconsider that last part. You see, I married me a powerful ugly creature...If I could make you prettier I would!"
"Butcher knife?"
"So does this! I call her Vera."
"Ha! It's from my mother!" And then reading the letter so slowly, and pulling out the hat.

"That's why I don't kiss 'em on the mouth." followed by dead silence...
"Well Jayne ain't a girl...I got man-parts!"
ROFLMAO!!!

Well, most of my favs have been said already...Jayne gets the best lines...LOL
One that I really like though is in HoG when they are talking about going to help and Zoe says that any that want to stay on the ship can, Jayne's talking about not seeing the benefit of helping them out when Mal says "they're whores"....right away Jayne comes back with "I'm in", not so much a great line on it's own but the way it is delivered makes it classic Jayne, IMO.
