That scene came from "Trash" when Simon had Jayne paralyzed on the med-bed after Jayne was injured on the top of the Serenity.

Alright, thanks you two. I remember him being paralyzed but I didn't remember what he said. I'll have to go back and watch it again.

Simon: Hey.
Wash: I mean, present company excluded.
Jayne: Let's not be excluding people. That'd be rude.

Book: Well, no.

Book: Some orders allow shepherds to marry, but I follow a narrower path.
Jayne: But you still got the urge. They don't... cut it off or nothin'?
Book: No, I'm more or less intact. I just direct my energy elsewhere.
Jayne: You mean like masturbatin'?
Zoë: We're getting him back.
Jayne: [staring at Mal's severed ear] What are we going to do - clone him?
Mal: Now all we need are some patients.
Simon: Corpses. For this to work River and I will have to be dead.
Jayne: I'm starting to like this plan.
Jayne: Are you saying River's a witch?
Wash: Yes, Jayne, she's a witch. She's had congress with the Beast.
Jayne: She's in Congress?
Wash: How did your brain even learn human speech?
Jayne: Don't see much point getting involved in other people's trouble's without an up front price negotiation.
Zoe: As I said, no one's forcing you to go, this job is purely speculative.
Jayne: Good, don't know these people don't care to.
Mal: They're whores.

(about Kaylee): Captain, can you stop her from bein' cheerful, please?
(after Mal punches out Simon) Jayne (smugly): saw that comin'
Jayne (to Vera, his favorite gun, which is in a spacesuit so it can fire): Clear as day. See, Vera? Dress yourself up; you get taken out somewhere fun.
We applied the cortical electrodes, but were unable to get a neural response.
Looking at a statue of himself: Oh hey, I got an idea. Instead of us hanging around playing art critic till I get pinched by the Man, how's about we move away from this eerie-ass piece of work and get on with our increasingly eerie-ass day, how's that?
You guys had a riot? On account of me? A real riot?
Captain says you're to stay put. Doesn't want you runnin' afoul of his blushin' psychotic bride. She figures out who you are, she'll turn you in 'fore you can... say... "don't turn me in, lady".

Zoë: Shepard, isn't the Bible kind of specific about killing?
Book: Very specific. It is, however, somewhat fuzzier around the area of kneecaps.
Wash: Little River just gets more colorful by the moment. What'll she do next?
Zoë: Either blow us all up or rub soup in her hair. It's a toss-up.
Wash: I hope she does the soup thing. It's always a hoot, and we don't all die from it.
Book: I'd forgotten - you're moonlighting as a criminal mastermind now.
Simon: No, but I'm thinking about growing a big black mustache. I'm a traditionalist.
River (looking at petaline having contractions):What do you think is in there?
Mal (to Jayne):Well my days of not taking you seriously are certainly coming to a middle.

I've just watched "The Train Job" for the sixth time since getting the DVDs, and Jayne has a line there that no one else has mentioned so far.
It's in the infirmary scene after he was shot by the fed while being pulled up off the train. Wash is saying that Niska's men can just read a magazine, cause they aren't taking off until Zoë and Mal are back on the ship.
Jayne says, "These are stone killers, little man. They ain't cuddly like me."
