I'd forgot about some the fight scenes mentioned here:
Equilibrium: I loved those shootout scenes in there where he's just standing still, blowing everyone away :P
Opening fight in Highlander is always a classic.
Just about any fight in Kung Fu Hustle. Hilarious movie.
One I always thought was interesting was Way of the Gun. I'm far from an expert in gunfights outside of gaming, but those shootouts always seemed pretty realistic. Especially the way the two cover each other.
And of course: River vs the Reavers at the end of the BDM. I'm usually just starting to dry my eyes at that point, and it's just so emotional seeing her still up and fighting at that point for some reason. Never fails to bring that waterworks again :P

Jet Li vs. Jet Li final fight scene in "The One". Not a good movie in general, but allow me to point out all the factors that makes the final fight scene superior to any other.
1)Legitimate and Identifiable Technique: Everyone knows Jet Li is a professional martial artist, not like Jackie Chan who studied Kung Fu at opera school. The two styles displayed in "The One" are two of main three Taoist fists, Pa Kua Zhang and Ching I Chuan. The third and most famous, of course, is Tai Chi Chuan.
2)Philosophical Diametrics: The end fight scene is a classic black and white battle of good vs. evil. Obviously, it's quite stylish to have a person fighting themselves, as it brings about the whole "inner conflict" issue. What makes this fight so very unique is that each character is using a style that represents his alignment. Gabe Law, the hero, is the one using Pa Kua, a very flowing and open style with absolutely no closed fists and emphasizing circular and evasive movements. Gabriel Yulaw, the villain, is the one using Ching I, of which the opening form taught to practitioners is known as "Splitting Fist". It emphasizes simplicity and directness, nearly all steps involving sliding strait forward with a protruding knuckle.
3)Cinematography: Ok, so it's a movie, it can have all the legitimacy and good story in the world and still suck if the cinematography is off. So, final fight scene, two very powerful guys who's powers are so strong that they're moving too fast for normal people to conceive. So, the camera speeds up to their perception level, and everything else slows down. It was done several times earlier in the movie, but this time it was made spectacular by virtue of the environment. Sparks were shooting off all around them, and while these two characters duke it out in real time, all the sparks are falling slowly, almost like a light snow around them. A few times, the characters go into slow motion, and the sparks nearly stop, suspended in the air.
You can say what you want about realism and what not. If you're looking for the best MOVIE fight scene, this was it.

I own The One, and love it. It was one of Jet's best fights, no doubt. I should have put it on my list, too.

9: 58th Vs. Chig foot patrol in "If they lay us down to rest..." from Space: Above and Beyond: Quick, clean, no rounds fired- totally professional.
10: USS San Pablo Vs. Chinese Junks in The Sand Pebbles: Never sneak up on Steve McQueen when hes swinging an Axe!

Most of my choices have already been mentioned, but I don't think anyone said the part in the 1st Matrix where Neo and Trinity are going to rescue Morpheus. That whole fight where they are just cool and calm blasting away at the lobby of the building is GREAT!!
on a side note...I can't believe some one else out there has seen Six-String Samurai!

Jeff Speakman (and Ed Parker, the founder of American Kenpo who arranged the fight scenes) really created something special with Perfect Weapon. I have probably watched that movie 20 times, just for the fight scenes. Of course, as a Kenpo student at the time that movie came out, and later a Kenpo instructor, it has special significance. Anyway, I'm glad to see it mentioned.
