Timmy and the other crippled kid in South Park! (I know it was based on a bad movie fight scene, but I don't actually know which.)

Just about any fight scence in Hero will do but the one between Nameless and Sky is my favorite.
The already mentioned fight in They Live is a classic.
Jackie Chan vs. the two guys on the roof in Who Am I?
The Princess Bride, Westley vs. Inigo(sp?) is one of the most entertaining sword fights ever.
Any lightsaber duel except for the one in A New Hope.
Ripley vs. the Queen in Aliens.
Anytime the Hanson brothers take the ice in Slapshot.
Rocky vs. Thunderlips in Rocky III. Come on, that was just plain fun.
Honorable mention to Adrian Paul from the Highlander series. Can't remember a specific fight but he did a great job on that show.

I intensely despise the Hollywood standard blow-to-the-back-of-the-head or punch-to-the-jaw and they fall unconscious garbage. As such, I think one of the best TV fights has got to be Jayne's fight against the guard in Ariel. So brutal and also believable!!!

The Timmy Vs Jimmy fight was an homage to the They Live fight between Roddy Piper and Keith David. Which I forgot to put on my earlier list, despite the already vocal support for it!

Hmmm, lets see. Can anyone say Jet Li in Fist of Legend? Yeah, I know . Wire work, blah blah blah. I must say that movie featured the best wire work I'd ever seen. Kong really kicked ass against the dinosaurs. Anything with Lee Marvin beating someone down. I wish I could be that cool.

It's hard to pick out favorite fights when they all have different variables. Wires, weapons, realism, setting, characters... all of these can set a fight apart.
e.g.:

Kill Bill vol. 2: The Bride vs. Elle Driver
Raising Arizona : Hi vs. the Snoat Bros.
Favorite Gun Fights:
Hard Boiled: Opening gun fight in the restaurant, Chow Yun-Fat is the man
Tombstone: Curly Bill vs. Wyatt at the creek
Desperado: In the bar they use everything but a grenade launcher.
Favorite Sword Fights:
Errol Flynn vs. Basil Rathbone: any movie
Princess Bride: of course
Highlander: to me there are no sequels
Anakin vs. Kenobi: IMHO I think you should be disqualified if you use the force to throw stuff at people.

The Musketeer (2001): Ladder/barrel sequence
Crouching Tiger, Hidden Dragon: Duh.

Final Biggie in Roman Polanski's "MacBeth"
Broadswords and dragging around tons of armour; it'll always be an exhausting slugging match.
Silliest fight is from "Under Seige". Our Man in the Ponytail is normally cool in such circumstances, and it's one of my favourite films, but the knife fight with Tommy Lee Jones is a bit like two nancies handbagging.
Legolas anywhere. I'm convinced he got his stairs / skateboard gag off Chow-Yun Fat in "Hard Boiled".
A mention for the mayhem in the Church at the end of "The Killer". Danny Lee was even cooler than Fat in that film.
River.
And Book. The way he just flattened Laurence.

Don't forget Jason Statham in either of The Transporter movies. And he does his own stunts!
Sam & Shelob in LOTR: The Return of the King.
Butch Cassidy & the Sundance Kid: when Butch has to fight the mutinous member of his crew. "Somebody say 1-2-3." "1-2-3!" Bam!
Jackie Chan: almost any fight scene, as long as you can skip the rest of the movie.
Indiana Jones (the original): the guy with the sword. Who can forget it?
James Bond (Roger Moore): so help me, I can't remember which movie it was, but he tries to protect the two young Japanese girls, who push him aside & proceed to kick all the bad guys' butts.
This is very fun! I'd better stop now but I'll keep thinking about it.

Buddy vs Death in Six-String Samurai...well, actually, there's a lot in Six-String Samurai.
TV? All those repetative endings to Abarenbo Shogun where Shinnosuke/Yoshimune always takes down that large group of bad guys. My favorite being the 800th episode special where Shinnosuke/Yoshimune actually has to ascend Edo castle (dueling different people on each level) to stop the ronin who've taken it over...just cause it was so different for the series.
Honorable mention... Red vs Blue Haha.

Great wacky-fun sword-fighting in "Pirates," coached by Errol Flynn's old sword coach.
