2 and 5 are actually my favorite - I feel they most closely touch on the show's overarcing themes, and have similar stories for Buffy, the story I find most compelling. Some of the details were off, and the pacing wasn't wonderful, but the story is my favorite.
Plus Spike is hysterical in 5th season, some of the best moments in the show.

Yeah, 3 is the best (IMO). You're already pulled in because of the end of S2. And then it takes off from there and just doesn't stop. 3 is a well-oiled machine, all aspects of BUFFY come togther in a cohesive way that pushes the arc all the way through episode 22.
"Gingerbread" is the only weak spot for me and it's okay. Plus it created the ratification of Amy and thus more BUFFY lore.

Fave seasons of BTVS:
2-5
these eps played best episodically (watched week-to-week) AND worked well within their season long themes/big bads.
Neither 6 nor 7 worked so well episodically for some reason but both seasons seem to work better when watched in marathon sessions (on dvd). Seasons 6 and 7 each have their own fantastic episodes that you can't help but love (and belong in the top 10 or 20 of all time best Mutant Enemy accomplishments):
Once More with Feeling,
the return of Faith arch,
Conversations with Dead People,
Lies My Parents Told Me
just to name a few.
