My best friend and I just talked on the phone!! This is very exciting because she's been living in Egypt since the end of January. The last time I talked to her was just before she left, and the last time I saw her was the begining of January (she lives half an hour away, and we were busy studying and packing etc.). I miss her SO much!! She's coming back in 28 days...not that I'm counting... She needs to come back. My house has changed so much since she left, and she needs to meet my puppies. And of course, she needs to see me. She said that she misses me more than any of her otyher friends, it made me feel special, but I miss her that much too. I mean if I was away for that long, I'd miss her most as well. We've been friends since forever. Our moms were really good friends and everything. We've known eachother since we were born. I can't wait till June 30th!

Recipe Experiment 1

So, the wife tends not to like me ordering out. Which in principle I agree with as it's expensive if done a lot. But, the problem is when trying new things, stuff can get burn or in general be punishment to eat. So, if that happens I order, typically with a little protest. Well, for the next little while she's not here so I can (at least) put off the complaining till later  So, experiments awaaaaaaaay  Anyway, I decided to post the successful experiments. The goals for these are low cleanup fallout, about 1/2 hour in kitchen max, simple and being healthy and tasty. Tough, but not impossible. My first experiment yesterday was successful. Used an ingredient in a non-typical way, but whatever. This one should feed two people. 1 loaf of Focaccia bread. I used Rosemary Foccaccia bread. 1 green pepper Classico Spicy Red Pepper pasta sauce Frozen MeatBalls (diameter about that of a quarter) *very* detailed instructions While the oven is heating: Cut bread in half then cut each half down down the horizontal. Yes, it's a big ass sandwich. Cut the green pepper as desired. Though I cut it in lengths and then those in half. Toss the this in a pan with some pasta sauce. Not too much as we're going to reduce it later and not want that to take forever. At this point the oven should be heated so put 16 of those meatballs in the oven. About 5 minutes before the meat balls are done put the pan on med-low heat. Once the meat balls are done, add them to the pan and continue to reduce the pasta sauce until it's not so liquidy. I actually use a spatula to cut the meatballs in half so that the meat can be more evenly distributed on the sandwich. Once that is done (obviously) put half on each sandwich. Now, although this is quite tasty, IMO salt & pepper to taste and there stands room for cheese on there as well. Havarti or Swiss would probably be good. To round out the meal, one could have a fruit cocktail as well. This can be bought in can form or fresh from the grocer. Or whatever fruity goodness that turns your fancy. The fallout is 1 pan, 1 baking sheet, 1 knife and 1 cutting board. That is, other than what it would be even if getting KFC. This could be clean in less than 10 minutes by hand. And given the time saved by not waiting in line at KFC (or where-ever) along with the out of the way travel time that's saved, things should about even out. Happy and healthy eating
