I think it would be a terrible idea for Joss to waste a minute of his precious time on this damaged series...
I will always love the original Star Wars Trilogy, but the prequels are a waste...and the re-done DVDs are something I'll never bother to watch.
I feel good about Joss doing 'X-men 3' because he has always loved the X-men and is currently writing the comic, so doing the movie would be something in keeping with all of that.
But generally speaking Joss is more creative than any other person currently working in Hollywood and it would be ridiculous for him to be tied down into someone else's universe & characters when his own are so superior.

(and actually I toned down that rant...because personally I think Geo Lucas has gone completely insane)

Ya know, two years ago, I ordered the original trilogy from Singapore on DVD. Yup, you heard me. Singapore. And no, it wasnt a crappy VHS to DVD burn, but an actual LaserDisk to DVD burn and the quality is just as good as any other store bought DVD I own.
Best 30 bucks I ever spent.
I know that movie makers like to think of films as their vision and what not, but when you compare the first movies with these last pieces of fecal matter, there is no contest.
The newer movies may be prettier but they are about as full of character and flavor as my Life Size Han Solo/Princess Leah cardboard cutout I had as a kid.
One thing I do like about the new box set: It doesnt say "Newly re-edited version" or "Director's Cut". Because anytime you have ONLY the Director's Cut available, then it shouldn't say Director's Cut. Just like Blade Runner. Only the DC version is available on DVD... unless you're like me. Get some techie to burn a Laserdisk version of what you want to DVD and ta-da! You now own the movie you wanted.

At Dragon Con, I sat in on a panel that shed some light on this issue.
They said that we would never see a re-release of the original trilogy, and its all because of George Lucas' ex-wife.
See....the rights to the original trilogy fell into their negotiated divorce settlement. Meaning, if he makes another dime from the re-selling of the original trilogy, she gets a piece of the action.
However, the new versions are exempt from that agreement. So, he can sell all he wants without giving her any money.
I dont know if this is the real reason, but I found it gorram interesting.

He also states the reason for not releasing the original edition costs money - because it would really tank wouldn't it.
I suspect the real reason is if he were to have released the two versions along side, we all know which version would have outsold the other.
Still, this way, he could make a bucket load on the box set, then release the originals - then again, pigs might fly. To me, its not about the fact that I'm seeing a "half finished" film - rather Lucas is ignoring the maxim that art is never finished, only abandoned.
The only valid additions to the new versions would be those that were in the original script but could not be filmed, or re-introducing cut sequences.
Its like PT Anderson saying there is a good AvP movie in the script he "wrote" (many an English teacher will criticise my use of this word for what he spews onto the page). In the WGA arbitration, every inch of his script was seen, and there wasn't a lot that wasn't filmed.

I did hear one bit of good news about the new DVDs: They took out Luke's wimpy scream in Empire Strikes Back. So the best movie of the three will no longer have anything that makes me cringe.
I also hear the Han/Guido incident was tweaked. Guido still shoots first, but maybe it won't be as bad.
I am still going to watch a friend's copy (who insists on getting it) before I pick it up.

What about Firefly? "Objects in Space" was re-edited for the DVD, with Inara saying something different to Mal than was originally shown on TV. The only people who will ever see the "River Hears Mal and Inara's Thoughts" scene as it was originally shown are the people who saw it on TV broadcast, originally. Sure, there are tapes of it out there, but eventually, the tapes will wear out, or get erased over, whereas the DVD format will last for years to come, with proper care.
Why did Joss change this scene? Why did we get an 'altered' "OiS" ep on our DVDs? Because the circumstances-- episodes being released out of order, or not being shown at all-- forced his hand and he put something in there as a sort of stop-gap-- an explanation for something that had the eps been shown in proper order would have been redundant. So he changes it in the DVD release. I don't hear people complaining over this.
Yes, I hate the prequels. They embody everything that was weak and flawed about the Original Trilogy and couple it with overblown FX that today looks like something in a computer game. They destroyed my faith in the George Lucas Star Wars machine. But I became a fan of SW when the Special Editions were released. Frankly, a lot of the alterations, I like. This is probably due to my perspective on the trilogy, though. I don't consider those who like the 70's and 80's releases to be stuck-up geeks or nerds, because I actually prefer fantasy and sci-fi films made before the advent of CGI (Alien, Aliens, Masters of the Universe, and Legend being prime examples), but I hope that people will not consider my fondness for the Special Editions as being indicative of lack of taste.
That said, I do think that Hayden Christiansen does look a tad evil in that scene.

I feel like I need to see Episode III, even though my gut tells me it will be another waste of time. So I have decided that I won't pay for it - instead, I'll pay to see "Serenity" again (as it will hopefully still be playing by the time "Star Wars" opens) and then sneak into "Star Wars" afterwards. Who's with me?!

Wonderful and Wise 'tash (and all you mere mortals who hang upon his every word):
I actually argued the pitiful state of the SW franchise with a co-worker today, until he finally confessed that he could give a rat's ass about Star Wars. He goes to see a movie. He doesn't care about the finer points. So be it.
I think JW could and would do a good job on TV versions of Star Wars, based on the story guidelines of that last trilogy we're never gonna get. You know, the one that would have picked up after the Rebel Alliance (does that wording seem right to Firefly fans?) victory at Endor. First, JW obviously is as much of a SW geek as any of us. Remember, Kaylee's got a miniature of Han in carbonite next to her hammock in the engine room. Secondly, JW is doing (or being considered to do) X3. So, he obviously doesn't have a problem chewing on another dog's bone, as long as there's still some meat on it.
He'd be a fool to turn down the opportunity to write, direct and maybe even produce correct Star Wars fiction. It's got to be the dream job of every cinematic artist, to return this property to its former stature. Think of the multitude that must have jumped for a chance to do LOTR justice... Think of the potential dialogue for recast Han, Leia, Luke and Wedge in a television series, if Joss/Tim were writing. I'd be on it like a duck on a june bug.
Lastly, I have a little trivia question that I came up with, which my co-worker honestly couldn't answer, though he professed to having seen all the SW movies:
Which live actor will have been in 4 of the 6 movies, after Star Wars III: The Sudden But Inevitable Betrayal goes to final credits? (Not puppet or robot.)
(EDIT: Okay, it's 5 of 6 now, on the DVD set. GL reedited one of the movies in which the actor did not originally appear. How's that for on-topic?)
