During the funeral River puts paper on a little rocket then Zoë is walking with a candle but in the next shot the little rocket is gone. In the original theater movie did it show them launching the rocket?

I love it. it's like wiping your ass with silk.

I saw the movie two times in pre-release screenings, and I don't think it was in either of those. I have heard that it was filmed but edited out, which I think was unwarranted. What would it have been, like five seconds or less?

I saw the first cut and it did indeed launch then explode with the fireworks doing a nice fade into the blowtorch work on Serenity's hull. A pity that it was cut from the theatrical release.

Joss should seriously consider a "director's cut." That thing would sell like hotcakes.

Joss has said several times that his Director's Cut is the movie that was released to theaters on September 30, 2005.

Would it have been seen it a early trailer or preview?

A real pity it was cut. Having the rocket launch, explode and seque into repair work would have given such a lovely closure to the scene. Oh well. It's hard to get movies into the theaters. Lots of compromises.

I would hope for an "Extended Cut", then.

IIRC, Joss said quite a few of the cuts he made were because they were for time...which is a consideration more for a theatrical release. For the DVD/BluRay release? Not so much.
