There are so many, I don't think I could ever say which is my favorite. But right now, considering everything that has happened with the series, the dvds, and the greenlighting of "Serenity," I would have to say the most appropriate quote of all is from the first few minutes of the pilot:

It was Shindig, I believe, and Inara speaking to Mal about what she thought of the pool game. I don't remember the exact quote though.

Like most people here, I have way too many favourite quotes to count. Here's a small selection though:

Jayne: Here's an idea I've been working on: why don't we shoot her first?
Wash: It is her turn...

Wash: Alright! Everybody NOT talking about sex, in here. Everyone else, outside!

Book: Well - isn't that *special*!

Mal: It takes a great man to show mercy. STAB I'm just a good man. STAB Well - I'm alright.

And on a slightly different note:
Simon's "I am very smart..." speech in Serenity chokes me up every time I see/hear it. The speech, plus the footage and music that goes with it is beautiful...

And my favourite Simon/River moment:
River (seeing the syringe Simon's brought): It's time to go to sleep again?
Simon: No, mei mei. It's time to wake up.
