After watching the episodes over and over for weeks I have finaly settled for my favourite quote. It's from the pilot Serenity and unsurprisingly is a Joss line :). The way Mal says "politely" at the end always makes me burst out laughing. Just the thought of trying to shoot someone politely is hillerious.

That back and forth between Mal and Zoe is about my fav. Not so much for its hilarity, but when Mal says.. " ....cause?". That line even got my 76 yr old dad to laugh, something he rarely does while watching t.v. these days. Thanks Firelfy.
