Man, you guys beat me to a ton of good ones, but I still have a couple:
"The Train Job", when Mal realizes Feds are on the train unaware that he's about to pull a theft right under their noses:
Mal: This job I would do for free.
Zoe: Well in that case, can I have your share?
Mal: No.
Zoe: If you die, can I have your share?
Mal: Yes.
"Trash", after Inara calls Mal a petty thief:
Mal: Petty?
Inara: I didn't mean petty.
Mal: Well what did you mean?
Inara: Swa-shi? (sp?)
Mal: (annoyed) That's Chinese for "petty".

my fave for dramatic poigniant writing and characterisation is

and the line that made me laugh more than anything else has in years was
jayne: that's why I never kiss 'em on the mouth.
just works for a grotty little perv like me :)

i think he says "we are a peaceful race" while he holds up his hand like he is doing the stereotypical native american "how" thing or whatever.

My personal favorite is a River quote - in Safe, when she's talking to Simon:
"You gave up everything you had to find me, and you found me broken"
Gives me chills, every time.

Most of my fav's have been covered above. I can't believe I almost got to the end without someone adding Inara's: "Every well bred petty crook knows the small, concealable weapons go to the far left of the place setting." [from memory, excuse errors] Which is classic.
Frankly, Jubal Early supplied the strongest, most creepifying dialogue throughout OiS, but I particularly like his exchange with Simon:

e: A lion? ....
But I'm partial to the one from River in my sig below.

I thought he said "Well you can already see I have" I mean it makes more sense. He's holding a gun to the guy and taking the part for free.
