I'd go with Magnificent 7, Once Upon a Time in the West, The Wild Bunch, Pale Rider, High Plains Drifter, Open Range. Unforgiven was OK.
Rio Lobo and Sons of Katie Elder would be before Shootist for me.

5. Little Big Man.....and as some have said this movie is just a lot of fun. Lots of comedy and dark humor, a re-telling of the old west, from a point of view that is sympathetic to the Indians.

The one I was forgetting was Joe Kidd, but I also didn't mention High Plains Drifter.
Although I thoroughly enjoy Dances with Wolves, never considered it a western.
