Actually, the answer is two. Nandi is not counted, since she never completed her training, which leaves Inara, and Roberta, a woman she speaks to briefly during Shindig.

I remember Roberta but I don't recall any confirmation that she was a companion. Inara would of course be familiar with most of the people in those social circles so the fact that she knew her doesn't necessarily speak to her occupation. Do you have a source?
