If you started from the first of Babylon 5 I can understand your reservations, but seasons 2-4 were excellent, and until Firefly came along I considered B5 to be the best SF ever produced for tv.
Re: The Man From U.N.C.L.E. - I was a freshman in high school when it debuted, and I watched and enjoyed it then. Probably had not seen it for more than thirty years until I recently upgraded to digital cable. It currently airs on Wednesday nights on American Life Network. I've only watched parts of four episodes so far. I say parts of the eps, because I haven't been able to stand it for more than a few minutes. Bad writing and acting personified. I have no defense as to why I liked it in the first place, since it was long before I discovered pot.

I absolutely love B5. Yeah, the first season is pretty slow, but a lot of the stuff set up that year pay off in spades later in the series. I'll also grant that the effects are pretty dated now, and some of the gust actors were atrocious. But that was the beginning of CGI, and B5 was one of the first shows (if not the very first) to use all CG effects. The scope and ambition of that story, especially given the low budget they had, was an incredible accomplishment.
That, and from a writer's standpoint, what J. Michael Straczynski (creator/show runner) did on that show is unprecedented. From the second season on, he wrote every single episode of the series (save on durring season 5, written by Neil Gaiman) while still serving as the exec. producer, and even directing some of the episodes.
I can't wait for the new B5 DTV anthology that's coming (I just hope it's better than Legend of the Rangers - which admittedly, kinda sucked).

For whatver reason, I just never could get into Babylon 5, but Farscape, to me, is right up there with FF in terms of writing, storytelling, and characterizations. You won't be disappointed, by any stretch, and sci-fi gave them four years and their own BDM to tell their story.

If you want to go with the really old-school sci-fi, there's british shows like The Quartermass Experiment and Blake's 7 and the tv series of Hitch-hiker's Guide To The Galaxy.
For the really cheesy and low grade american sci-fi, there's shows like Earth: Final Conflict and Earth 2. If Star Trek's more your type, there's always Andromeda.
I'm not saying that any of these are good, but if it's quantity you're after, you can always give them a try.

i suppose this depends on your definition of excellent, but might i suggest "Cleopatra 2525".
its not "excellent" in the strictest sense of the word, but it is does star Gina Torres and is really good for a laugh.
Cleopatra is a stripper in the 20th century who goes into a coma during breast enlargement surgery and wakes up 500 years in the future, in a world where machines have forced mankind underground. so, naturally, she joins the scantily clad all female rebellion against the machines. in every episode Cleo must find a way to defeat the bad guys using nothing but her fashion sense and her ability to spin around a pole.
i love this show. its so completely horrible. i bought the box set of the complete series (30 eps) because it had gina in it and found a cubic zirconia in the rough.
if you're looking for something well made and engaging, then this is not the show for you. but if you have a sense of humor, i recommend you check it out.
