I would have to say that Shindig is my favorite, it's just a fun episode.

I love, love, love Heart of Gold! The warmth of the crew when they arrive... Jayne wantin' to 'get sexed already'... the whole 'Simon in charge of a situation that makes Mal nervous'... Mal & Inara in denial... Inara crying - really crying ... Miss Nandi & Mal getting closer and closer and softer and softer on the couch - the conversation when their lips are touching then the 'nice and slow' night of passion... Oh yes! That woman died happy - I just know it! I love the way that the young woman who was labouring all night was the one who walked out, deferred to by everyone else, and took the life of Rans Burgess... everyone in that episode was brilliant!
Although my very close second is Out of Gas...

Out of Gas is my favourite too - it's such a well rounded episode - great scripting, great camera action/editing (gotta love the slightly different tints for each bit of time), wonderful music.
But, gorrammit, it's hard to choose ;)
