I loved Wash's line in War Stories:

I'm surprised no one's said one of my favorites from "Our Mrs. Reynolds."

One of my favorites is from "Bushwhacked" when Jayne suprises and shoots injuring the only survivor of the Reavers' attack and the crew catches up with him. When Simon remarks that the frightened victim is a real beast to which Jayne replies:
"Looked bigger when I couldn't see him".
If you think about it it makes no sense (if you couldn't see them how would they look.....) but it does in Jayne's hyper-trigger sensibility.
I have other favorites, but most have been listed here.....

There's a pretty powerful Jayne moment from the end of Jaynestown:

I think Wash and Jayne have some of the best lines. I love the one from Wash:

Actually, if you used a transverse cut across both carotid arteries, you'd bleed to death in approx 12 seconds, and be unconscious in 4.
