I'm prolly gonna get this a little wrong since it's been a couple of days since I watched Jaynestown but here is my fave

Not a line, but the look Jayne gives Kaylee in the engine room of the Serenity pilot after she has him open up the port hydraulics controls and she says "it's simple" -- the look he gives her after seeiong all those wires and blinking lights... Hi-larious.
Also love the scene in SAFE when Jayne passes Simon in the hallway after dumping all his stolen stuff back in Simon's room.

actually the safe-scene is the worst ever! it is so not jayne, its sooo badly played.... its the only scene i really didnt like in the whole series!!!! (funny as it may seem)

I do like the following from Safe when he's hastily returned Simons things
"Hey, there, doctor. Glad you're back now, on the ship"
Very amusing, out of character, delivery!
And his very approving "You fought the law!" in Jaynstown.
And his response to the security guard's "I'll need the passcode" in the BDM, which, being a hail of lead, is very in character 
Finally, he'll be gutted that no-one chose "We applied the cortical electrodes but were unable to get a neural reaction from either patient". He worked so hard on that one!
Keep Flyin' and have good sex (preferably not at the same time)

It's the look, as much as the speech. The hand pawing at Saffron from out of shot, and being smacked away by Zoe and Kaylee. That 'Bushwhacked' glare. Crouching on the walkway while Kaylee is in the infirmary in 'Serenity'.
