Mine are "Out Of Gas". But musically, it has to be "Objects In Space".

I like them all, but I think Jaynes town and War stories are my favorites. The part in war stories were mal says "You want to meet the real me" is frightening, theres just no other word for it. I also like in the train job were Mal hands the money to one of Niska's henchman who goes on and on about how they will all die. I loved the way Mal says darn it before he kicks the guy into the engine.
You can fix anything if you have a big hammer and enough duct tape.

Definitely "Jaynestown" the bit with River & Books hair just crack me up.
Second - "War Stories", and third - "Objects In Space".

My favourite episodes are:
1) Our Mrs Reynolds - I love this episode, it is so funny, Shepherd Book and his special hell speech just makes me laugh every time. And of course 'Some people juggle geese!'
2) Out of Gas - I like all the flashbacks and seeing how they all arrived on the ship. Plus Wash's moustache is hi-lariuos. As is Zoe 'He bothers me'
3) Ariel, War Stories, Objects in Space, Serenity - can't choose between them, love them all.

Hard to choose, there just all so good. But I think that Serenity (the pilot not the BDM) wins in the end. But not with much.
