Convention Panels?

Hey folks,
I'm new to posting on these forums, but not new to Firefly/Serenity fandom. I was recently at a convention that offered two or three panels, and I was, well, not wholly impressed with them. Some of it was that some of the folk were last-minute as others had cancelled, but they seemed like round-robin panel discussions with the group and the panel crew, like an open conversation.

I'm a person who says "If there's a problem, do what you can to fix it"... So I'm curious. When you go to conventions, what kind of stuff do you look for in panels? What kind of panel material and 'styles' do you like for events at conventions, especially panels run by fans? What kind of materials would you want to see run?

I'm a linguist who has studied Mandarin for some time, and is picking it up again - so I'd like to see things that might work with Chinese in the 'verse, cultural nods we see (such as Jayne's 'tea and dumplings reference') and the like.
