Don't know if this has been posted or not but towards the end of the credits (the last... 30 seconds or so), there's an acoustic version of our beloved theme song. Very backporch banjo and acoustic ;)

On this note, has anyone put this online yet? I'd love to have a copy in MP3 form, and the soundtrack is sadly lacking it...now that the DVDs out...anyone gotten around to that yet? :)

Yupper, I posted it in a thread a couple days ago, however I'm sure it's buried somewhere so I'll post it again.
Try this. Once you click on the site, it will take about 45 seconds for the site to upload the song. There is a bar on the top right of the screen that counts down until it will say "Click here to download." Also, there is a small box that comes down just before the countdown stops, just click the X to close out of that so you can click to download.
