Jayne bows his head when Book says grace in the pilot. It's not impossible he was raised in a religious household. He and Book clearly bond throughout the series.
I've always liked the discussion in The Message--"My kinda life don't last long, preacher, so I expect I'm invested in makin' good sport of it whilst I can. You gonna read over me when I get taken down, Shepherd?"
And he sounds completely serious when he says, "The Lord should oughta look after the dead."
