There are lots of pancake mixes on the market, but I think the bestest kind are homemade. I've got a really good recipe that's very easy to make. Do you want it? I can email it to you later.
What kind of a pancake maker did you buy? I just make mine on a griddle or in a frying pan. *curious*
As for toppings, most people do butter and maple syrup. I like fruit. A nice thing to do is to saute apples in butter, sprinkle with cinnamon and use it as topping. Or heat up the syrup in a saucepan and add banana slices. Oooh, also, she'd probably love this: add chocolate chips to the batter after you pour it onto your griddle. And you can even eat them with chocolate syrup or whatever. I take leftover cold pancakes and make pb&j sandwiches with them. It's good. Kind of like cold crumpets.
And when I was a kid, my mom used to always make us mickey mouse pancakes. You just add two little drops at the top to make ears and then add choc chips for eyes. We loooooved it.
Anything you can't get in the UK and you want me to send over, let me know. I'll see what I can do. Probably not till after Xmas, though.
P.S. It looks like the smoke has gotten worse! Have they gotten all the fires out yet?

Nos - british pancakes are thin, like crepes, i always burn them
CMS - its just a machine like a waffle maker, with pancake size things, you put the batter in and then cook for 30 seconds, then you can flip it over to cook the other side, all very cool.
I gave her chocolate sauce with them the other night, ive got some maple syrup but i cant get the lid off hahahahahahaha
i like the idea of putting choc chips in
and yes id love your receipe hon
and they are close to putting the fires out, but the smoke is gonna take a while to disapear and yup its worse today cause its windier

That's funny. I've never heard of a pancake maker. But it's a good idea because every pancake comes out perfectly round.
I'll get the recipe tonight. It's in this old post-WWII cookbook that I picked up at a used book sale. It's called "The Working Girl's Cookbook" and it's all about how the young unmarried working girl must be able to cook delicious meals so she can snag a husband. Hi-larious. It has several very good recipes in it that I use often.
And I looove crepes.

Here are pictures from a friend of my friend who lives in St Albans. Her house is just a little over two miles from the depot. Her friend's flat is only half a mile away and the whole area has almost been knocked totally flat. The drive to their stableyard, on the far side of Hemel Hempstead, was like driving through the apocalypse.

And she's okay, too. Her phone ran out of credit from all the frantic calling/texting around in the aftermath. Had a massive asthama attack that almost had her rushed to hospital too, but then it and the sky cleared up and she got better again, thankfully.
