Chris Beck was awesome on Buffy, and really added so much to the show that I think a lot of people didn't notice. While a lot of it was synth because of the TV budget/time, his themes were breathtaking.
As far as mainstream Hollywood composers, I reckon Hans Zimmer would do an interesting score for Firefly - he's always willing to experiment and do something different, and wouldn't do a predictable (but nonetheless good) score that someone like John Williams or James Horner would be likely to.
