A few from me:

That whole short Shakespearean monologue from Jean-Luc, the most elegant, refined, sexy hero ever.
Also, I LOVE the lecture that Kirk gives to the bratty Elaan of Troyus! When he's forcing her to use a fork and such. That whole scene never fails to crack me up!
And the unforgettable, "Let's get the hell out of here." To me, that is Shatner's best-delivered line ever. The look on his face is heartbreaking. Makes me want to just wrap my arms and legs around the man. Every time, I get this overwhelming urge to ease his pain...great line from a great episode.

Okay, sorry Chrisisall, I don't have a quote for you. I was just going to say that I watched Star Trek: Generations on Sci Fi last night (I was bored) and James Doohan was in it and it made me a bit sad. That's all.

The best scene for me is the most obvious one, the end of Best of Both Worlds Part 1 where you've spent nearly 45 minutes at the edge of your seat and then you get two knockout punches:
