My favorite was Out of Gas. I really enjoyed seeing how Kaylee, Jayne, and Wash came to be aboard Serenity. The music score for this episode was wonderful, the best of all the episodes in my opinion.

My memory must be failing me.

The Star Trek movies went into production immediately after it was cancelled? I thought there was a fair sized gap.

Surprise to me, too - I thought the cancellation was in 1967 and the first movie 1979 - unless there's an earlier movie I don't know about. Or maybe it's Star Trek TNG? If it's TNG, that's kind of a weird case, as there were already Trek movies being made even before TNG started, but it does fit.
