I'm sure there were a lot of books on the subject. That's quite a bit of a different story than government paperwork.

Even if there was a huge conspiracy and cover up, what could possibly be in there that would require 2,800 documents to be written up about it?

Some rando could go in their garage and blow their own brains out right now and there would be maybe a total of 5 documents written up including the hazmat cleanup, the coroner's report and the death certificate.

I realize we're talking about a President, but why so many documents?

It takes a lot of paperwork to create science which can reverse the direction of a bullet in mid-air. In current day, imagine the paperwork generated to support and discuss the algore invention of Global Warming. Include the equivalent paperwork if algore had not invented the Internet.

Part of the problems involved with the cover-up was that, after the destruction of evidence not fitting the narrative, later revelations exposing the truth in opposition to the whitewash story. Such as The Zapruder Film, discovered 5-6 years later, and not thoroughly considered until another 7 years after discovery.

The Warren Commission. Congress is in the habit of generating mountains of paperwork.

The Select Committee on Assassinations. Another mountain from Congress.

Kind of my point here. I'm sure all of the Alphabet Agencies needed to write up documents for an event like that lest they be deemed unnecessary.
