Watching the series again now but still can't decide....
So I'm going to go with Serenity. As I've mentioned elsewhere I hadn't seen a single clip of the show before I bought the DVD. But that one episode was enough to convince me that I'd love the show. Some shows take a while to draw you in, this one had me hooked from the start.
But it's a credit to the writers, directors, actors (everyone!) that it's so gorram hard to pick a best or worst episode - it's so consistent.

I will start of with my history as a recent recruit. Old friend of mine who shares many of my sensibilities highly recomended the show, bought it, watched it alone after the wife and child were asleep.
Now here is where I sound like a goram Fed spy - I did not love it at first. Maybe it was the solitary experience, I dont know, but I kept watching. The Chinese had an appeal for me and do not hand me over to the Reavers, I didn't hate it, I just was not quite getting it.
Then I saw "Our Mrs. R" and that was hilarious, but it also operated on other...levels, so I still withheld judgment.
But when a lone singer belted out the line "Jayne, the man they call Jayne", I realized that this was something special, suddenly I realized how well defined these characters were and I was totally hooked.
Looking back now after seeing each episode at least 3 times, I realize that "Serenity" and "Out of Gas" are the best episodes. But the question is favorite. "Vertigo" is Hitchcock's masterpiece, but that does not make it my favorite ("Rebecca" or "Strangers on a Train")
My favorite right now is "War Stories" there is something in for everyone - and I mean the cast.
Mal - dealing with Wash and Zoe, keeping Wash going under torture, introducing the real him, the classic brave/hero/coward moment of "No I dont"
Inara - doing some special companion work, the priceless look she gives Jayne when the Counselor leaves.
Jayne - the guilt of the apples, his most famous line...twice, his rational pessimism about rescue and nevertheless some real fine heroics
Book - Who is this guy!, a parable about kneecaps, and his droll pardoning of Simon "Son, I was there...
Wash - if I have to tell you 1.You have not seen it and 2. I'm talking too much, not really being the Zoe on this team.
Simon - maybe not so much for Simon fans, but he tries, good advice and classic gesture with "Just dont fiddle with it"
Kaylee - a little weak for Kaylee (thats why I have a soft spot for "Shindig") but she still is wonderfully unable to fight, and she flat out portrays the fear of River, and not a bad reaction herself to the Counselor.
River - Total coolness, short but pivotally sweet.
Zoe - She'd scare me from the otherside of the 'verse - simply awesome, great apple story, the checking out of the defenses on the first pass, cutting off Mishka (LOVE MISHKA)and making her choice - total warrior total leader.
Too long, I know, but there all great (least favs are Heart of Gold and Message (dont think it would have the power if the show had not been cancelled) so had to share my reasons. It is not the plots for me, its the folks.

You see how I'm not hittin' him, I think I've grown!

I really enjoy all the episodes like everyone else who will read this but i have to say "objects in space" because of the photography during the first ten minutes. With river walking around and her amazing perception/reallity that the veiwer gets firsthand also the shots taken are just beautiful (i.e the shot of river picking up the stick and all the autumn leaves inside the ship )its amazing this sho got cancelled so prematurely

Would have to say 'Safe'. It's just this simple little story, but it loses nothing every time you watch it. And it has some of the most beautiful scenes in the whole series - River dancing with the townsfolk, her apology to Simon for what she's become, and the "Time to go" scene at the end.
Tied at second: 'Out of Gas', 'Objects in Space'.
