So I'm sitting around being bored and coming dangerously close to indulging in a bout of maudlin slef pitty when I decide to engage in one of my favorite time wasting exercises. I choose two more or less random more or less incongruent words to google search for. Imagine my surprose when I find that 'sustainable cheese' not only exists but has it's own industry.

aw thanks! i was away for the weekend and then i couldn't get here cause the site was down, and then last night i didn't have to go to bed and get enough sleep for work in the morning and theres a local fault with the internet connection!

Oh, I wish you hadn't posted that.
Someone commented on the dairy's use of rennet and now I'm feeling all kinds of guilty and might go through one of my "I must give up cheese" phases.
You can get cheese without rennet (rennet, by the way, is an enzyme taken from the stomach lining of calves. There are eco-friendly and vegetarian rennets, but the baby cow stomach enzyme is the cheapest, as calves are a by-prouduct of dairy cows.)
As always, it's the war between convenience and conscience.
