The second episode ever aired.

I think I most like Jayne's "Looks like a thing to me" after Kaylee saves the ship.

Or the interview duel montage between the Alliance officer and the Serenity crew and passengers.
Maybe River gazing in awe of the stars while Simon is quivering in fear of being spaced (losing pressure in his space suit.)

I really enjoyed the interrogation scene as well as Jayne pranking Simon with having to wear a spacesuit.

I failed to mention in the OP that Bushwhacked had the highest audience share of all the aired episodes, at 5.47%.
