in out of gas, before Jayne leaves with the others, he mentions that he left a grav suit prepped for when he needed it. Mal refused to use it.
I know this must have been brought up before.
But why did he do that?
Was it a "Captain always goes down with his ship" thing?

The line from the shooting script is:
JAYNE
And I prepped a suit for you. It's hanging in
the foredeck. When the time comes, you can just...
I don't see that this is a grav suit; seems more likely it's one of the suits they were wearing in the pilot or when the Tams hid outside the ship. It might buy the Captain a few hours but I don't think he had any real hope that anyone would find him. I think he wanted the dignity of dying with his ship instead of clinging to the last instant in a smelly suit.

I don't remember Mal refusing to take it, I thought he had said something to the effect of "won't be needing it, but thanks"
I took it to mean Mal was still trying to be optimistic and that someone would still come to help. And he felt that admitting he might need a suit would be like giving up. Thats the way I saw it anyway.
"Haha, mine is an evil laugh."

Also, by the time he ended up needing it, he'd been shot.

Agreeing with evil dinosaur, though there might have been some internal subtext there.
