Dede Allen is an excellent choice! Not just Bonnie and Clyde, but Little Big Man, Serpico, Dog Day Afternoon, Slap Shot, Slaughterhouse Five, Reds. Terrific resume!
I searched around IMDb for different films I remember for their editing, but in most instances their editors didn't do much else of significance.
However, I would like to nominate someone as having the potential of becoming a very recognizable name in editing in the future - Lisa Lassek.

Maybe not greatest but I'd like to mention John Jympson on the strength of A Hard Days Night. Sure Lester gets all the credit but the big new thing in the movie was how it was edited more than anything else.
