Irish Spice Cake

Just in time for St. Patrick's Day. Leave it to the Irish to come up with a recipe for a cake that includes beer. :) Don't think you can get drunk on it, though, so it's good for the whole family. It's vegan and not terribly unhealthy, to boot.

2 cups brown sugar
1 cup hot water
1 cup warm Guinness
2 tablespoons soft soy margarine/Earth Balance
1 teaspoon salt
1/2 teaspoon cloves
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder

Bring sugar, water, Guinness, margarine, salt, and spices to boil in a saucepan (you may also add a bag of raisins here, if you like). Simmer for five minutes. Allow to cool (but not harden). Sift dry ingredients together, then mix into the cooled mixture. Line a large loaf tin with 2 layers of wax paper, add in the batter, and bake for 1-1/2 hours at 350 degrees Fahrenheit.

If you don't have any Guinness on hand, you can also substitute another cup of water.
